Creamy Garlic Chicken
700g chicken breast fillets, cut into 4cm pieces
1 medium onion, sliced
1 tsp minced garlic
150ml Light & Creamy Evaporated Milk
1 chicken stock cube, crumbled
1 tbs fresh thyme, chopped
150g baby spinach
2 tsp cornflour mixed with 2 tsp h2o.
1. Coat a pan with cooking spray, heat and add the chicken in batches, cook stirring until brown and tender. Remove from pan.
2. Add the onion and garlic to the pan and cook whilst stirring till the onion is soft. Lower heat and stir in the milk, stock,thyme,spinach and cornflour/water.
3. increase heat and cook, stirring until sauce boils and thickens. Return to pan the chicken and stir over heat til hot.
