
This is a great recipe to start with if you are new to dumpling making. It was the first type of dumpling I made and still my favourite. The only disadvantage is tht it can get messy. Ingredients:flour, water, salt, an egg.
sift the flour into a bowl and create a crater in which to crack the egg. Crack the egg into the crater and proceed to fold the flour into the egg, as the mixture gets dry add water and a pinch of salt bit by bit until you have made a mixture that has a consistency something similar to honey. How much of the ingredients are used depends on the amount of Galuska you wish to make, I normally use about 300 grams of flour for 4 people. When the correct consitency has been reached and there are no lumps boil a pan of salted water. When the water is boiling fiercly the mixture can be cooked. A special contraption is available for this purpose but as it is difficult to find an icing bag may be used to make droplets the roughly the size of a kidney bean to the size of a butter bean.
At the same time heat some lard in a pan (vegetable oil can also be used but lard gives a better flavour). When the dumplings are cooked they will float to the surface, remove them with a slotted spoon and place them in the hot pan as they come out of the water. They should take about 2 minuts to cook
These dumplings compliment Hungarian Cuisine extremely well and can be used as a side dish for Gulash. Another way of serving them is to wait until they are all in the pan of lard and when the lard gets hot to add some beaten eggs. stir constantly and ad salt and the eggs will scramble. Put them on a pate with baked beans and sprinkle paprika liberally on top.
