Vanilla Cake3 cups all purpose flour
1 1/2 cups sugar
1 tablespoon baking powder
3 large eggs, beaten
1/3 cups milk
2 teaspoons vanilla
Vanilla Frosting (recipe follows)
Preheat the oven to 350 F. In a mixing bowl combine flour, sugar and baking powder. Beat in eggs and oil and stir in milk and vanilla. Stir until combined well and pour batter into 2 buttered and floured 9-inch round cake pans. Bake for 35 minutes. Let cool in pans for 5 minutes and turn out on racks to cool completely. Spread tops of layers with some of the frosting. Stack layers and spread remaining frosting on sides, swirling decoratively.Vanilla Frosting:
1 pound box confectioners' sugar
3/4 stick unsalted butter, softened
1 tablespoon milk
1 teaspoon vanilla
In a bowl beat sugar and butter until fluffy. Add milk and vanilla and beat until creamy and combined well.
