  • 9 Eggs
  • 6 Plain Croissants (split in half)
  • cup of Green Onion (chopped)
  • 3 cups of Lettuce (torn)
  • tsp. Salt
  • tsp. Black Pepper (Pisi Kaali Mirch) (fresh ground)
  • cup Ranch Dressing

  1. In a small pot, boil eggs in water on stove for about 20 minutes until they are hard-boiled. Cool eggs and remove shell. Cut each egg in half. Remove the yolk from each egg and place in large bowl. Mash yolks with fork. Stir in onions, salt, pepper and ranch dressing.
  2. Chop the egg whites and mix into yolk mixture.
  3. To make each sandwich, top bottom half of 1 croissant with about cup lettuce and cup egg mixture. Cover with top half of croissant. Repeat for remaining sandwiches.
