Lychee Lassi Recipe

Ingredients:
  • 10 Lychees (shells and stones removed)
  • 30 grams or 1 ounce of Raspberries
  • 1 Vanilla Pod (seeds scraped out and pod reserved)
  • 1 Mint Sprig (Podina) (to garnish)
  • A handful of Ice (crushed)
  • 2 tbsp. of Greek Yogurt
  • 1 tbsp. Honey (Shehed)
  • Lime Juice (from ½ of a lime)

Directions:
  1. Place the lychees, crushed ice, honey, seeds from the vanilla pod and yoghurt into a blender and blend until smooth.
  2. Pour the lassi mixture into a tall glass.
  3. Place the raspberries and lime juice into a small bowl, crush the contents with a fork, then spoon on top of the lassi.
  4. Mix lightly. Garnish with the empty vanilla pod and a sprig of mint and serve.
