Chicken Adobo
with Coconut Milk

  • 3 lbs of chicken (I use chicken thighs and drumsticks)

  • 1/2 cup of vinegar

  • 1/4 cup soy sauce

  • 1/2 cup water

  • 2 Tbls or to taste Patis (Fish Sauce)

  • 1/4 tsp pepper

  • 1 small bay leaf

  • 5-7 cloves garlic minced

  • 3 Tbls cooking oil

  • 1/2. cup coconut milk

 

  1. Place first 8 ingredients in a pot and simmer covered for 30 mins or until chicken is tender

  2. Drain and set sauce aside

  3. Heat oil in a skillet, add chicken and sauté until brown.  Pour off all fat from skillet.

  4. Add sauce again, scrape browned bits clinging to skillet and simmer uncovered until liquid is reduced to about 1/4 cup

  5. Add coconut milk and cook stirring for 2-3 minutes

  6. Serve hot

Prep time 5 minutes

Cooking time 50 minutes
