Chocolate Chip Cookies

Ingredients

  • 1 cup butter flavored shortening

  • 3/4 cup white sugar

  • 3/4 cup brown sugar

  • 2 eggs

  • 2 teaspoons Mexican vanilla extract

  • 2 1/4 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 2 cups milk chocolate chips

Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.

In a large bowl, cream together the butter flavored shortening, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla .Combine the flour, baking soda and salt; gradually stir into the creamed mixture. Finally, fold in the chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.

Bake for 8 to 10 minutes in the preheated oven, until light brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Yummy Plain Or Jam Filled Suger Cookies

Ingredients

  • 1 cup butter or margerine

  • 1 1/2 cups sugar

  • 2 eggs

  • 4 1/2 cups sifted flour

  • 1/2 teas. nutmeg

  • 1 teas. baking soda

  • 1 teas. salt

  • 1 teas. baking powder

  • 1 cup sour cream

  • 1 1/2 teas. vanilla extract

Directions

1 Cream butter with sugar untill fluffy. Add eggs, one at a time; beating well after each addition. Add sifted dry ingredients alternately with sour cream, mixing after each addition until smooth. Blend in vanilla.

2 Wrap in waxed paper and chill over night or for an hour or so till firm enough to roll. Roll on floured board to about 1/4" thickness, cut with cookie cutters; put on ungreased baking sheets. Sprinkle with sugar. Bake in moderate oven (375) 12 min. or until browned around edges.

3 If you want To make these as double layer cookies* with jam in the middle^.^, roll dough out as instructed. Use two different size cookie cutters in the same shape(hearts,stars, cresent moons, etc.). Cut larger cookie and place on sheet.

4 Put between 1/4 to 1/2 teas. jam on larger cookie. Place smaller cookie on top , pressing edges down. Sprinkle with sugar and bake as directed.

MAKES 4 DOZON SINGLE COOKIES ~OR~TWO DOZON FILLED

*Double layered cookies may take about two minuets longer to cook
