Considering I don't have alot of time I still like to feed my kids good meals. This one is so easy you won't believe it !
- 1 lb Ground beef (chuck tastes weird to me)
- 1 can of refried beans (I usually get fat free)
- 1 pkg shredded mild cheddar cheese
- 3 burrito size tortillas
- 1 pkg taco seasoning
- 2 fresh tomatoes
- Lettuce
- Tub of sour cream
- Brown the ground beef and add the taco seasoning as directed.
- Take the first tortilla and butter one side. Using a semi-deep dish place the tortilla butter side down. Spread the can of refried beans on the tortilla.
- Place another tortilla on top of that. Then place the ground beef over that one giving it the layer effect.
- Place another tortilla over the beef and place the cheese on top, covering all of the tortilla underneath.
- Place in the oven at 350° until all the cheese is melted.
- Dice the tomatoes and lettuce.
- Once you have removed it from the oven let the cheese cool a little for easier cutting. Once the pieces are cut, spread the lettuce, tomato and sour cream over the top.
I like the contrast between the hot and cold. My son likes to add chives and onions but it is all to taste.
