- 1 cup cooked, mashed sweet potatoes
- 1/3 cup butter, melted
- 2 eggs, beaten
- 1/3 cup milk or Half & Half
- 1/2 tsp baking powder
- Pinch of salt
- 1 tsp nutmeg
- 1 tsp vanilla
- 1 cup sugar
- 1 unbaked 9-inch pie shell
- Preheat oven to 400°.
- Combine sweet potatoes with all ingredients, blending well with electric mixer.
- Pour into pie shell.
- Bake at 400° for about 30 minutes or until golden brown and puffy.
Serve alone or with a dollop of sweetened whipped cream.
