Sweet Potato Pie (with Microwave instructions)
  1. Use a food processor or fork to mash sweet potatoes together with melted margarine.
  2. Blend in eggs, sugar, cinnamon and nutmeg.
  3. Add milk and vanilla.
  4. Pour mixture into baked pie shell. Microwave on medium-high 7 minutes.
  5. Sprinkle pecans over surface of pie.
  6. Rotating midway through cooking, microwave on medium-high 6 to 8 minutes or until center no longer jiggles.
  7. If you prefer, you can bake it in the oven at 375° for about 35-45 minutes or until it doesn't jiggle.

Yields 8 servings.
