- 8 oz spinach
- 2 strips bacon, cooked until crisp and chopped
- 1 apple, unpeeled and diced
- 1/4 cup cheddar cheese, grated
- 1/4 cup mozzarella cheese, grated
Maple Dressing:
- 3/4 cup mayonnaise
- 1 Tbsp lemon juice
- 1 tsp vinegar
- 3/4 cup sugar
- 3 Tbsp maple syrup
- 1/2 tsp freshly chopped parsley
- Maple dressing: Combine all of the dressing ingredients and blend until smooth. Store covered in refrigerator. Yields 1 1/4 cups.
- Trim, wash and dry spinach and tear into bite sized pieces. Place in a salad bowl and set aside.
- Just before serving, pour desired amount of dressing over spinach and toss well to coat.
- Add bacon, apple and cheeses, toss lightly.
