- 1 stick (1/2 cup) butter, softened
- 3 Tbsp confectioner's sugar
- 1 cup all-purpose flour
- 1/2 cup finely chopped pecans
- 1 tsp vanilla
- Confectioner's sugar to roll cookies in
- Cream butter and confectioner's sugar till fluffy in medium-size bowl.
- Stir in flour gradually, then pecans & vanilla, until well-blended.
- Chill 30 minutes.
- Roll dough into marble-size balls. Place on lightly greased cookie sheets.
- Bake 20 minutes at 325°.
- Cool 5 minutes on cookie sheet, then roll in additional confectioner's sugar. Cool completely before storing.
Makes about 3 dozen.
