Saints Po-Boys
  1. Slice the onions and bell pepper into thin strips.
  2. Sauté in butter until almost done; add sausage. Sauté until heated through.
  3. Meanwhile, split the buns and lightly toast.
  4. Put the meat mixture on buns and enjoy! (I add a little mayo on the buns... but that's up to you.)

If you have leftovers, make a box of Wild/White rice. Add the mixture to it the rice. It's amazing how the flavors blend. YUM!
