- 4 cups vanilla wafer crumbs
- 1 1/3 cup frozen shaved coconut
- 1 cup finely chopped pecans
- 1 (14 oz) can sweetened condensed milk
- 1/2 cup rum OR 2 tsp rum flavoring + 1/4 cup water
- Confectioner's sugar
- Combine crumbs, coconut and pecans in bowl.
- Stir in condensed milk and rum, mixing well.
- Shape into 1" balls and roll in confectioner's sugar.
- Store, covered, in refrigerator.
- Just before serving, re-roll in confectioner's sugar.
Makes 6 dozen balls.
Note: For best results and more rum flavor, make at least 24 hours before serving. Will keep well in refrigerator for several weeks.
