Julie's Red Baked Potatoes
  1. Wash and simmer unpeeled potatoes until not quite done. Drain and allow to cool.
  2. Cut potatoes into 2-inch chunks and place in a 13 x 9" baking dish.
  3. Put chopped onions over potatoes.
  4. Melt butter; add parsley, salt and pepper. Pour over the potatoes. Sprinkle with paprika and place rosemary sprigs on top.
  5. Cover and bake for 1 hour at 350°. Uncover and bake 1/2 hour longer.
