- 3 lb medium-size red potatoes
- 1/2 cup chopped onions
- 1/4 to 1/2 cup butter, melted
- 3/4 tsp paprika (or to taste)
- 1/2 tsp parsley (or to taste)
- 1/4 tsp pepper
- 1 tsp salt
- 2 or 3 sprigs of rosemary
- Wash and simmer unpeeled potatoes until not quite done. Drain and allow to cool.
- Cut potatoes into 2-inch chunks and place in a 13 x 9" baking dish.
- Put chopped onions over potatoes.
- Melt butter; add parsley, salt and pepper. Pour over the potatoes. Sprinkle with paprika and place rosemary sprigs on top.
- Cover and bake for 1 hour at 350°. Uncover and bake 1/2 hour longer.
