Gram's Pumpkin Chiffon Pie

Combine:

  1. Cook over low heat until thick, stirring constantly.
  2. Soak 1 envelope Knox Gelatin in cold water. Stir into hot mixture.
  3. Chill until partly set.

Beat:

  1. Add 1/4 cup sugar. Beat until stiff.
  2. Fold into chilled Gelatin/Pumpkin mixture.
  3. Pour into cooked pie shell and chill until set.

This makes 2 pies. Serve with plenty of whipped cream!
