Combine:
- 3 egg yolks, beaten
- 3/4 cup brown sugar
- 1 (16 oz) can pumpkin
- 1/2 cup milk
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/8 tsp cloves
- Cook over low heat until thick, stirring constantly.
- Soak 1 envelope Knox Gelatin in cold water. Stir into hot mixture.
- Chill until partly set.
Beat:
- 3 egg whites
- Add 1/4 cup sugar. Beat until stiff.
- Fold into chilled Gelatin/Pumpkin mixture.
- Pour into cooked pie shell and chill until set.
This makes 2 pies. Serve with plenty of whipped cream!
