This is the way I've made mine for decades. I like to use a chuck roast, 'cause it gets oh so tender!
- Cut slits in 3-4 pound chuck roast, and stuff with sliced garlic. Salt and pepper roast, and dust with flour.
- In a dutch oven, brown in small amount of hot oil, on high, till brown on all sides.
- Add:
- 3-4 potatoes, cut in large cubes
- 3-4 carrots, cut in rounds
- 1/2 bell pepper, large slices
- 1 medium onion, quartered
- Salt and pepper, black and cayenne, to taste
- Put lid on and put into 350° oven for 2 hours.
(If you wanna get a little carried away ~ just before taking from oven, put mozzarella cheese slices on top, and add a can of stewed tomatoes 'around' the roast. Serve over platter of hot pasta.)
