Pot Roast

This is the way I've made mine for decades. I like to use a chuck roast, 'cause it gets oh so tender!

  1. Cut slits in 3-4 pound chuck roast, and stuff with sliced garlic. Salt and pepper roast, and dust with flour.
  2. In a dutch oven, brown in small amount of hot oil, on high, till brown on all sides.
  3. Add:
    • 3-4 potatoes, cut in large cubes
    • 3-4 carrots, cut in rounds
    • 1/2 bell pepper, large slices
    • 1 medium onion, quartered
    • Salt and pepper, black and cayenne, to taste
  4. Put lid on and put into 350° oven for 2 hours.

(If you wanna get a little carried away ~ just before taking from oven, put mozzarella cheese slices on top, and add a can of stewed tomatoes 'around' the roast. Serve over platter of hot pasta.)
