My xMIL's potato salad was always soooooo good. I finally watched her make it one day. The secret was that she boiled the whole potaotes in their skins. I found that was why the 'potato' taste was so good. (When potatoes are peeled and cut up into cubes - the way I had always done them - it's logical that the water takes away the potato taste!) So I began to cook my potatoes whole, and my own mother thinks I make the best potato salad ever! Both my sisters, too. I'm giving estimates on amounts here, no real recipe.
- 5-6 whole red potatoes, boiled, cooled, peeled, and cut into cubes
- 1 cup mayonnaise
- 1 tsp prepared yellow mustard
- salt, pepper, cayenne to taste
- 1 tsp parsley flakes (optional)
- 6 green onions, snipped
- 1 tsp celery seeds
- Mix all ingredients except potatoes.
- Add potatoes last.
