Black-Eyed Peas and Sausage
  1. Sauté onions, pepper, garlic, and parsley in Dutch oven with 2 tablespoons olive oil.
  2. Add salt, meat, sausage, black-eyed peas, and rice.
  3. Add water and bring to boil.
  4. Mix well, cover, and reduce heat to low. Cook 45 minutes.
  5. Remove lid for 5 to 10 minutes before serving.
