- One 2-3 lb fryer, cut into pieces
- 1 cup dry, unseasoned breadcrumbs
- 1/4 cup Parmesan or Romano cheese
- 1/2 teaspoon salt + pinch of cayenne pepper
- 1/2 stick (1/4 cup) butter or margarine
- Combine breadcrumbs, cheese and seasonings.
- Melt the butter and dip chicken pieces in, then into crumb mixture.
- Place chicken in lightly greased baking dish. Cover with foil.
- Bake 45 minutes at 350°, remove foil and bake an additional 15-20 minutes, till brown.
