I have adapted this from a roll recipe and we usually have this around Christmas:
- Juice and grated rind of 2 oranges
- 1 tsp yeast (or 1 pkg)
- 1 egg
- 2 Tbsp melted butter
- 1 Tbsp sugar
- 3 cups flour
- 1/2 cup lukewarm water
- 1 tsp salt
- Confectioner's sugar
- Dissolve yeast in warm liquid.
- Add egg, butter, salt, sugar, orange juice and rind (reserve a small amount of both to make a stiff frosting or glaze for the finished bread).
- Add flour, beat till smooth. Add more flour if needed.
- Let rise until double.
- You can either punch down and let rise till double again or go ahead and bake bread.
- I have never had a set temperature for baking this as every oven I have used seems to be a lot different. 350° seems to be about average. Bake about 45 minutes. You should know by the smell, the golden crust, and the hollow sound or lightness of the bread.
- Take the leftover orange juice and rind. Add confectioners sugar until you get a consistency you like.
- Let the loaf cool then frost.
Sometimes I replace the water with warmed orange juice.
