These cookies are chewy and tart.
- 3/4 cup plus 2 Tbsp all purpose flour (or for a nutty flavor use 1/2 all purpose and 1/2 whole wheat pastry)
- 3/4 cup rolled oats or scottish oats
- 1/2 tsp baking powder
- 3 Tbsp finely chopped raisins
- 1/2 cup finely chopped fresh or dried cranberries or cherries
- 1/4 tsp salt
- 4 Tbs butter or margarine, softened
- 1/4 cup firmly packed dark brown sugar
- 2 Tbsp granulated sugar
- 1 large egg, room temperature
- 1/2 tsp vanilla
- Preheat oven to 400°.
- In medium bowl, combine flour, baking powder, oats, raisins, cranberries or cherries, and salt. Stir well.
- Combine butter and sugars in another bowl with electric mixer. Beat until light and fluffy. Add the egg, 1 tablespoon of water, and vanilla. Mix until blended.
- Add the flour mixture and beat on low speed until just combined.
- Drop by teaspoonful onto cookie sheet, about 1" apart.
- Flatten balls into 1/4" rounds.
- Bake for about 10-12 minutes or until lightly browned.
- Transfer to a rack to cool completely.
Recipe doubles easily. Enjoy.
