Oatmeal Cranberry Raisin Cookies

These cookies are chewy and tart.

  1. Preheat oven to 400°.
  2. In medium bowl, combine flour, baking powder, oats, raisins, cranberries or cherries, and salt. Stir well.
  3. Combine butter and sugars in another bowl with electric mixer. Beat until light and fluffy. Add the egg, 1 tablespoon of water, and vanilla. Mix until blended.
  4. Add the flour mixture and beat on low speed until just combined.
  5. Drop by teaspoonful onto cookie sheet, about 1" apart.
  6. Flatten balls into 1/4" rounds.
  7. Bake for about 10-12 minutes or until lightly browned.
  8. Transfer to a rack to cool completely.

Recipe doubles easily. Enjoy.
