Microwave Chocolate Truffles
  1. Melt chocolate chips in glass bowl on HIGH for 2 minutes. Chocolate will not look melted, but it is.
  2. Stir with wooden spoon. Let cool to room temperature.
  3. Beat in egg yolks, one at a time.
  4. Blend in Kahlua.
  5. Cook on HIGH 30 seconds.
  6. Add softened butter to chocolate mixture 1 tablespoon at a time, beating well after each addition. Continue until mixture is light and fluffy - about 4 or 5 minutes.
  7. Cover with plastic wrap and chill 5 hours or overnight.
  8. Roll mixture into 3/4" balls. Roll in cocoa powder.

Makes 5 dozen. Keep chilled until serving time.

NOTE: You can make a variety by rolling some in very finely chopped pecans, confectioner's sugar, or flaked coconut.
