- 12 oz semi-sweet chocolate chips
- 4 egg yolks
- 1/2 cup Kahlua
- 2/3 cup butter, softened
- Cocoa powder
- Melt chocolate chips in glass bowl on HIGH for 2 minutes. Chocolate will not look melted, but it is.
- Stir with wooden spoon. Let cool to room temperature.
- Beat in egg yolks, one at a time.
- Blend in Kahlua.
- Cook on HIGH 30 seconds.
- Add softened butter to chocolate mixture 1 tablespoon at a time, beating well after each addition. Continue until mixture is light and fluffy - about 4 or 5 minutes.
- Cover with plastic wrap and chill 5 hours or overnight.
- Roll mixture into 3/4" balls. Roll in cocoa powder.
Makes 5 dozen. Keep chilled until serving time.
NOTE: You can make a variety by rolling some in very finely chopped pecans, confectioner's sugar, or flaked coconut.
