Meatloaf patties with oven roasted vegetables.
- 1 lb lean ground beef
- 1/2 cup oatmeal (add slightly more if needed after adding egg)
- 1/4 cup chopped onion
- 1 Tbsp Worcestershire sauce
- 1/2 tsp dried basil
- 1/2 tsp dried marjoram
- 1 egg
- Mix all ingredients together.
- On baking sheet, shape 6 balls of meat into 6 thick patties. Bake for about 1/2 an hour at 350°.
- Serve with catsup or tomato sauce over top.
Roasted Carrots, Potatoes and Garlic
- 8 cloves garlic, peeled, left whole
- 4 large carrots, peeled, cut in half, trimmed and split lengthwise
- 2 russet potatoes, peeled and cut into medium sized chunks
- 1 Tbsp olive oil
- 3 Tbsp water
- Preheat oven to 350°.
- Arrange the veggies in a 13 x 9" baking dish, or use a corning dish with glass cover. Add oil and water and toss with veggies.
- Cover with foil or glass lid and bake until the carrots and potatoes are fork tender, about 30 minutes.
- Stir once during baking. Sprinkle with salt and pepper.
*If cooking both the meat and the veggies together, give the veggies a slight head start on the patties.
