Meatloaf Patties

Meatloaf patties with oven roasted vegetables.

  1. Mix all ingredients together.
  2. On baking sheet, shape 6 balls of meat into 6 thick patties. Bake for about 1/2 an hour at 350°.
  3. Serve with catsup or tomato sauce over top.

Roasted Carrots, Potatoes and Garlic

  1. Preheat oven to 350°.
  2. Arrange the veggies in a 13 x 9" baking dish, or use a corning dish with glass cover. Add oil and water and toss with veggies.
  3. Cover with foil or glass lid and bake until the carrots and potatoes are fork tender, about 30 minutes.
  4. Stir once during baking. Sprinkle with salt and pepper.

*If cooking both the meat and the veggies together, give the veggies a slight head start on the patties.
