- 2 Speckled Trout (4 fillets)
- 1 cup crushed macamadia nuts mixed with 2 teaspoons flour
- DO NOT ADD SALT - nuts are salty
- 4 Tbsp butter for sautéing
- 2 Tbsp butter
- 2 tsp flour
- 1 cup milk
- black pepper/cayenne to taste
- Melt butter in skillet.
- Dip fillets in melted butter, then in nut/flour mixture.
- Sauté about 4 minutes on each side.
- Remove from skillet to a serving dish that is ovenproof.
- Use same skillet, scrape up bits, and leave in skillet; melt butter, add flour, and whisk in milk and seasonings - to make thin cream sauce.
- Drizzle sauce around (not over) filets, put into 350° oven for 15 minutes, uncovered.
