Macadamia Crusted Trout
  1. Melt butter in skillet.
  2. Dip fillets in melted butter, then in nut/flour mixture.
  3. Sauté about 4 minutes on each side.
  4. Remove from skillet to a serving dish that is ovenproof.
  5. Use same skillet, scrape up bits, and leave in skillet; melt butter, add flour, and whisk in milk and seasonings - to make thin cream sauce.
  6. Drizzle sauce around (not over) filets, put into 350° oven for 15 minutes, uncovered.
