- 1 whole chicken, cleaned and dried
- 2 lemons
- 2 tsp lemon-pepper seasoning
- 1 tsp chopped parsley
- 1/2 stick (1/4 cup) butter
- 1 Tbsp flour
- 1/2 cup milk
- Make slits in meaty portions of chicken.
- Cut lemons in half. Squeeze lemon juice from one lemon all over chicken and rub in.
- Put squeezed lemon halves into cavity of chicken.
- Sprinkle chicken inside and out with lemon-pepper and parsley, also in slits.
- Bake, covered, in 350° oven for 1 1/2 hours.
- Just before chicken is done, melt butter in small skillet; add flour, stir, and add milk to make thin white sauce.
- Squeeze juice from second lemon and stir into sauce, also adding a touch of parsley.
- When chicken is done, pour sauce over entire chicken.
