- 2 eggs
- 1 cup sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 cup milk
- 1 Tbsp butter
- 1 tsp vanilla
- Beat eggs with sugar; add flour and baking powder.
- Scald milk with butter and add to batter. Add vanilla last.
- Pour into an 8x12" baking pan, which has been greased and floured.
- Bake at 350° for approximately 40-45 min. Check center for doneness.
Topping:
- 1/4 cup brown sugar
- 5 Tbsp butter
- 2 tsp milk
- 1/4 cup chopped pecans
- 1/2 cup coconut
- 1 tsp vanilla
- Mix and spread on hot cake.
- Put under broiler to brown and crisp the topping.
