- 3/4 cup butter or margarine
- 1/2 cup brown sugar
- 1/2 cup white sugar (opt.)
- 2 eggs
- 1 tsp vanilla
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1 1/2 cups oatmeal
- 2 cups chocolate chips
- 1 cup flaked coconut, sweetened
- 1 cup walnuts, coarsely chopped
- In large bowl, mix butter and sugars until smooth. Beat in eggs, one at a time. Stir in vanilla.
- In medium bowl, sift together flour, baking soda and baking powder. Gradually stir into butter mixture.
- Add oats, chocolate chips, coconut and nuts; stir until blended.
- Heat oven to 350°.
- With tablespoon, drop batter about 2" apart on baking sheet. Flatten with the bottom of a glass dipped in flour.
- Bake 15-18 minutes or until golden.
- Cool for 2 minutes before removing to rack to cool completely.
I made the cookies larger, and found it easier to flatten them with the palm of my hand.
