This recipe does not call for chicken, but you could add already cooked diced chicken as you add the potatoes and onion, and it will be fine.
- 4 potatoes, peeled, sliced
- 1 onion, chopped
- 1 cup mozzarella cheese, grated
- 1/4 cup Parmesan cheese, grated
- 1 can (10 3/4 oz) cream of mushroom soup
- 1/4 cup milk
- 1/2 tsp italian seasoning
- 1/4 tsp Garlic Powder with Parsley
- Preheat the oven to 400°. In a greased 2-quart baking dish, arrange half of potatoes and half of onions. Sprinkle with half of mozzarella cheese and half of Parmesan cheese. Repeat.
- In a small bowl, combine cream of mushroom soup, milk, Italian seasoning, and garlic powder. Spoon over the potato mixture.
- Cover and bake for 60 minutes. Uncover and continue baking another 10 minutes, or until the potatoes are tender.
