Italian Scalloped Potatoes

This recipe does not call for chicken, but you could add already cooked diced chicken as you add the potatoes and onion, and it will be fine.

  1. Preheat the oven to 400°. In a greased 2-quart baking dish, arrange half of potatoes and half of onions. Sprinkle with half of mozzarella cheese and half of Parmesan cheese. Repeat.
  2. In a small bowl, combine cream of mushroom soup, milk, Italian seasoning, and garlic powder. Spoon over the potato mixture.
  3. Cover and bake for 60 minutes. Uncover and continue baking another 10 minutes, or until the potatoes are tender.
