Use one 9-inch pie crust for each quiche. Double or treble recipe as desired or needed
- 1 9-inch unbaked pie crust
- 1 (10 oz) pkg frozen chopped spinach
- 1 small can (approx. 3/4 cup) sliced mushrooms, drained
- 1/2 cup chopped onion
- 1 Tbsp butter
- 4 eggs, beaten
- 2 cups Half & Half cream
- Salt, white pepper to taste
- 8 oz Swiss cheese, grated
- 1 cup small cubes of boiled ham
- Bake crust 10 minutes at 400° before filling with mixture.
- Prepare spinach according to package directions and DRAIN WELL. (Squeeze to remove all liquid).
- Sauté onion in butter; set aside.
- Combine eggs, cream, salt, pepper. Fold in spinach, mushrooms, onion, ham, and cheese; blend thoroughly.
- Pour filling into crust. Bake at 350° for 50-60 minutes.
- Let stand for 10 minutes before cutting to serve.
The good thing about quiche is that you can add almost any combination of items.
