- 2 cups all purpose flour (a combination of white and whole wheat pastry may be used)
- 2 cups rolled oats
- 1 1/2 cups granola
- 2 Tbsp baking powder
- 2 tsp salt
- 3 tsp cinnamon
- 1/2 cup brown sugar
- 1 cup raisins (omit if raisins are in the granola unless you like lots of raisins)
- 2 1/4 cups water
- 2 eggs
- 1/2 cup vegetable oil (I usually use applesauce, or 1/4 cup oil and 1/4 cup applesauce)
Mix dry ingredients with raisins, add water, eggs, and/or oil and applesauce. Stir just until moist. Pour into greased muffin cups. Bake in a 400° oven for 20 to 30 minutes. Makes about 2 dozen regular sized muffins or 1 dozen jumbo.
