- 1 medium size eggplant, peeled and cubed
- 1 Tbsp butter
- 1/2 cup chopped onion
- 1 green onion, sliced
- salt, cayenne to taste
- dash of garlic powder
- 1 cup seasoned bread crumbs + 1/2 cup for topping
- 1/2 cup grated cheddar cheese
- Cook eggplant till tender. Drain well.
- Melt butter, add onion, green onion, and seasonings; cook 5 minutes. Add bread crumbs, cheese, and eggplant. Stir well.
- Put into lightly greased baking dish and top with additional bread crumbs.
- Drizzle with a little melted butter.
- Bake, uncovered, at 350° for 30 minutes.
NOTE: You can add 1 cup whole or chopped saut&eactue;ed or boiled shrimp before baking.
