Eggplant Dressing
  1. Cook eggplant till tender. Drain well.
  2. Melt butter, add onion, green onion, and seasonings; cook 5 minutes. Add bread crumbs, cheese, and eggplant. Stir well.
  3. Put into lightly greased baking dish and top with additional bread crumbs.
  4. Drizzle with a little melted butter.
  5. Bake, uncovered, at 350° for 30 minutes.

NOTE: You can add 1 cup whole or chopped saut&eactue;ed or boiled shrimp before baking.
