Creamy Poached Eggs
  1. In a medium skillet combine the cheeses, milk and pepper. Cook and stir over medium heat, until the cheeses melt. Remove from heat.
  2. Break the eggs gently into the cheese mixture. Cover and cook over med-low heat for 3 to 5 minutes or until the whites are set and the yolks still runny.
  3. Top each muffin with a cooked egg. Stir the cheese mix with whisk and spoon over the eggs.
