- 5 cups all-purpose flour
- 2 1/2 cups sugar
- 4 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/4 tsp salt
- 4 large eggs
- 1 1/2 cups milk
- 10 Tbsp (1/2 cup + 2 Tbsp) unsalted butter, melted
- 4 tsp grated orange zest, or to taste
- 1 (12 oz) pkg fresh cranberries (about 3 1/2 cups)
- 2 cups coarsely chopped walnuts or other nuts
- Mix flour, sugar, baking powder, baking soda, and salt. Set aside.
- In a separate bowl, blend eggs, milk, butter and orange zest until frothy and golden yellow.
- Pour this mixture into the flour mixture and stir gently. Batter may be a bit lumpy. Gently add cranberries and walnuts.
- Bake in two 9-inch loaf or decorative style pans at 350° for about 55 minutes. Cool in pan.
