Cranberry Pie

I just walked down to the mailbox (yes, at midnight)... and had a letter from a dear friend on the coast, and she sent me this recipe for the holidays. Thought I'd share. She's an excellent cook, so I'm sure it must be good.

  1. Mix cranberry sauce and brown sugar in saucepan. Bring to a boil.
  2. Remove from heat and add package of jello; stir until dissolved. Let cool.
  3. Whip cream until stiff. Add nuts and cranberry mixture to whipped cream.
  4. Line a 9-inch pie plate with vanilla wafers, arranging them in bottom and up sides.
  5. Pour in cranberry mixture.
  6. Chill thoroughly.

If desired, additional whipped cream may be usd for garnish. This pie is especially good with Thanksgiving or Christmas dinner. - Ruth

(My note: I bet it would be good using raspberry jello, and maybe a graham cracker crust. See, I always have to change something...!)
