I just walked down to the mailbox (yes, at midnight)... and had a letter from a dear friend on the coast, and she sent me this recipe for the holidays. Thought I'd share. She's an excellent cook, so I'm sure it must be good.
- 1 cup whole cranberry sauce
- 1/2 cup light brown sugar
- 1 small box orange jello
- 1 cup whipping cream
- 1/2 cup walnuts, finely chopped
- Vanilla wafers
- Mix cranberry sauce and brown sugar in saucepan. Bring to a boil.
- Remove from heat and add package of jello; stir until dissolved. Let cool.
- Whip cream until stiff. Add nuts and cranberry mixture to whipped cream.
- Line a 9-inch pie plate with vanilla wafers, arranging them in bottom and up sides.
- Pour in cranberry mixture.
- Chill thoroughly.
If desired, additional whipped cream may be usd for garnish. This pie is especially good with Thanksgiving or Christmas dinner. - Ruth
(My note: I bet it would be good using raspberry jello, and maybe a graham cracker crust. See, I always have to change something...!)
