- 2 cups flour
- 1 cup sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 beaten egg
- 1 cup cranberries, cut in half
- 1/2 tsp salt
- 1/2 cup nuts (optional)
- 2 Tbsp shortening or oil
- Grated rind and juice of 1 orange PLUS enough water to make 3/4 cup liquid
- Mix flour, sugar, baking powder, soda, salt, nuts, and shortening or oil.
- Add rind and juice and water.
- Add egg and cranberries.
- Put into greased and floured loaf pan. Bake 1 hour at 350°.
NOTE: For mini-loaves, bake 35-40 minutes. Check.
