- 4 egg whites
- 1/4 tsp cream of tartar
- 1 1/4 cups mayonnaise
- 8 oz flaked crabmeat (can substitute with shrimp)
- 1 Tbsp snipped chives
- Dash of cayenne pepper
- 16 slices bread, toasted - crusts removed, cut into 4 trianges
- Beat egg whites in large bowl until foamy. Add cream of tartar and continue beating until very stiff.
- Combine mayo, crabmeat, chives and pepper in another bowl. Fold into egg whites.
- Preheat broiler.
- Arrange toast triangles on large baking sheet. Top each piece with crab mixture. Sprinkle with paprika.
- Broil 4-5 inches from heat until puffed and golden brown, about 3-4 min.
- Serve immediately.
