Cowboy Cornbread
  • Brown ground beef and onion in skillet until meat is browned.
  • Sprinkle with salt and pepper. Stir in green chiles and set aside.
  • Blend both packages Cornbread Mix with corn and eggs. Stir in milk.
  • Spread half of the Cornbread mixture in greased 9" X 13" baking pan or large iron skillet. Top with the meat mixture, then cheeses.
  • Spread remaining batter over top.
  • Bake in preheated 400° oven till golden brown (about 20 minutes).
