- 1 pkg Jiffy Cornbread mix
- 1 pkg Mexican Cornbread mix
- 1 can cream-style corn
- 3 eggs, slightly beaten
- 1/4 cup milk
- 1-1/2 lb ground beef
- 1 small can chopped green chiles
- 1 small onion, chopped (if desired)
- salt & pepper to taste
- 8 oz grated cheddar cheese
- 8 oz grated Monterey Jack cheese with peppers
Brown ground beef and onion in skillet until meat is browned. Sprinkle with salt and pepper. Stir in green chiles and set aside. Blend both packages Cornbread Mix with corn and eggs. Stir in milk. Spread half of the Cornbread mixture in greased 9" X 13" baking pan or large iron skillet. Top with the meat mixture, then cheeses. Spread remaining batter over top. Bake in preheated 400° oven till golden brown (about 20 minutes). (giszmoe)
