Pastry:
- Make enough of your favourite pastry to make 2 shells.
- You will also need a 12-inch Pizza Pan.
Filling:
- 1/2 cup Sugar
- 1/3 cup Ground Almonds
- 2 Tbsp Flour
- 6 Apples, cored and sliced
- 1 1/2 cups Fresh or Frozen Cranberries
- 4 tsp Butter
- 1 Tbsp Light Cream
- Prepare the dough and roll to half-again as large as the pizza pan (the excess will fold over to make the top). Lay pastry over the pan.
- Reserve 2 tablespoons of Sugar. Combine the rest with the almonds and flour. Sprinkle half the mixture over the 'pan' portion of the pastry.
- Arrange the Apple slices in a single layer over the mixture. Sprinkle with Cranberries, then sprinkle remainder of sugar mixure over top. Dot with butter.
- Fold the pastry over the filling and brush with Light Cream.
- Bake at 425° for 15 minutes. Reduce heat to 375° and bake for 35 minutes.
- Cool on a rack and dust with icing sugar
