Virginia Country Ham
  1. Wash the mold from the ham. Clean ham good. Rinse well.
  2. Soak in cold water overnight in large ham boiler or canner.
  3. Drain and rinse next morning and place in a large pot, preferably a ham boiler. Cover with water.
  4. Bring to a boil, reduce heat to a good slow medium heat or even simmer (low).
  5. Let cook rapidly for 25 minutes for each pound that your ham weighed.
  6. Remove from broth when done. You don't discard any broth or fat. You use this to season vegetables. You may skin the ham while warm, also remove most of the fat.

This is how we cook what is known as a "Virginia Country Ham".
