Country Club Potatoes
  1. Bake potatoes until done. Cut in half lengthwise. Scoop out potato and reserve shells.
  2. In a large bowl, mix potatoes with remaining ingredients. Salt and pepper to taste.
  3. Stuff potato shells with mixture, and sprinkle more cheese on top.
  4. Return to oven and bake for 20 minutes, until potato mixture is hot and cheese is melted.

Makes 8 servings (1/2 potato per serving).
