- 4 large baking potatoes
- 4 green onions, minced
- 1/2 cup bell pepper, minced
- 2 slices crisply cooked bacon, crumbled
- 1/2 cup ham, diced
- 1 1/2 cups grated sharp cheddar cheese
- 8 oz sour cream
- 1 stick (1/2 cup) butter, melted
- 1/2 cup grated cheese for topping
- Bake potatoes until done. Cut in half lengthwise. Scoop out potato and reserve shells.
- In a large bowl, mix potatoes with remaining ingredients. Salt and pepper to taste.
- Stuff potato shells with mixture, and sprinkle more cheese on top.
- Return to oven and bake for 20 minutes, until potato mixture is hot and cheese is melted.
Makes 8 servings (1/2 potato per serving).
