Cornish Hens with Orange Glaze

Glaze:

  1. Clean and dry hens.
  2. Season with salt & nutmeg.
  3. Put in foil-lined pan, and pour 1/2 cup orange juice over.
  4. Cover with foil and bake at 350° for 1 hour and 15 minutes.
  5. 30 minutes before hens are done, cook rice as package directions, except: use equal amounts of water and orange juice for the liquid, and add almonds.
  6. To make glaze: Melt butter in small skillet; add flour and stir. Stir in milk and orange juice.

Presentation: Put rice on plate, hen in center of rice, and spoon glaze over hen and part of rice.
