- 2 Cornish game hens
- Sprinkling of salt and nutmeg
- 1/2 cup orange juice
- 1 pkg Wild/White Rice mix
- 1/4 cup sliced almonds
Glaze:
- 4 Tbsp butter
- 2 tsp flour
- 1/2 cup milk
- 1/2 cup orange juice
- dash of nutmeg
- Clean and dry hens.
- Season with salt & nutmeg.
- Put in foil-lined pan, and pour 1/2 cup orange juice over.
- Cover with foil and bake at 350° for 1 hour and 15 minutes.
- 30 minutes before hens are done, cook rice as package directions, except: use equal amounts of water and orange juice for the liquid, and add almonds.
- To make glaze: Melt butter in small skillet; add flour and stir. Stir in milk and orange juice.
Presentation: Put rice on plate, hen in center of rice, and spoon glaze over hen and part of rice.
