- 2 pkgs unflavored gelatin
- 3 3/4 cups cold strong coffee, divided
- 1/2 cup sugar
- 1 Tbsp Instant Coffee powder
- 1 tsp vanilla
- Whipped Cream, lightly-sweetened
- In a small bowl, soften gelatin in 1/4 cup of the cold coffee. Set aside.
- In a 2 quart saucepan, heat to boiling point, but DO NOT BOIL, 3 1/2 cups of the coffee.
- Remove from heat and add sugar, Instant Coffee and vanilla. Add the softened gelatin and stir until sugar and gelatin are completely dissolved.
- Pour into one quart mold or individual cups or wine glasses and chill until firm.
- Pile lightly sweetened whipped cream on top and serve with a cookie.
