Coffee Jello
  1. In a small bowl, soften gelatin in 1/4 cup of the cold coffee. Set aside.
  2. In a 2 quart saucepan, heat to boiling point, but DO NOT BOIL, 3 1/2 cups of the coffee.
  3. Remove from heat and add sugar, Instant Coffee and vanilla. Add the softened gelatin and stir until sugar and gelatin are completely dissolved.
  4. Pour into one quart mold or individual cups or wine glasses and chill until firm.
  5. Pile lightly sweetened whipped cream on top and serve with a cookie.
