- 1 Keebler Ready Crust Shortbread Pie Crust
- 1 egg yolk, beaten
- 1 can (21 oz) peach fruit filling
- 1 cup coconut
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup butter or margarine, melted
- 1/4 cup wheat germ
- Preheat oven to 350°.
- Brush bottom and sides of crust with egg yolk. Set on baking sheet.
- Bake at 350 degrees for 5 minutes or until light brown.
- Spoon fruit filling into crust.
- In a small bowl, combine coconut, flour, sugar, butter and wheat germ. Mix until well-blended. Spread over fruit filling.
- Bake on baking sheet for 30-35 minutes or until filling is bubbly and topping is light brown.
