- 1/2 large head iceberg lettuce
- 2 peeled tomatoes, sliced
- 4 green onions
- 1/2 cup pepperoni
- 1 block (8 oz) mozzarella, thick sliced
- 1/4 cup fresh parsley
- 1/4 cup fresh basil leaves
- 1 tsp garlic powder
- 1 can (15 oz) garbonza beans (chickpeas), well drained
- 1/4 cup olive oil
- 1/4 cup wine vinegar
- Put everything except the beans and oil and vinegar on a large cutting board. Chop, chop, chop, until all is in very small pieces.
- Add the beans, oil, and vinegar, and toss until all is coated.
