- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 3/4 cup sugar
- 1/2 cup butter, softened
- 2 eggs
- 1 tsp vanilla
- 1 cup buttermilk (or 1 cup milk + 2 tsp vinegar or lemon juice)
- 3/4 cup chopped pecans
- 10 oz cherries, drained, rinsed, and chopped
- Mix flour with soda and salt.
- Cream sugar, butter, eggs and vailla. Add flour mixture to this.
- Add buttermilk, pecans and cherries. Mix till smooth.
- Pour into loaf pan and bake in preheated 350° oven for 55-60 min.
NOTE: If making mini-loaves, bake 25 min.
NOTE 2: I sometimes use half red and half green cherries.(Cotton)
