- 1 cup fresh, frozen or canned cherries, drained
- 2 cups all purpose flour
- 4 tsp baking powder
- 1/2 cup sugar
- 1 tsp salt
- 2 eggs
- 1/4 cup butter or margarine, melted
- 1 cup milk
- 1/4 cup sugar
- 1/4 to 1/2 tsp cinnamon
- Cut cherries in half (or chop in food processor).
- Combine the flour, baking powder, 1/2 cup sugar and salt in mixing bowl.
- In a small bowl beat together eggs, milk and butter. Stir into flour mixture, just to blend. Add cherries.
- Stir together 1/4 cup sugar and cinnamon.
- Fill muffin cups 3/4 full. Sprinkle lightly with cinnamon-sugar.
- Bake at 400° for 15-20 minutes.
Makes 12 regular or 6 jumbo muffins.
