- 1 1/3 cups all purpose flour (you can mix 1/2 whole wheat pastry with 1/2 white if desired)
- 1/3 cup sugar
- 2 tsp baking powder
- 2/3 cup milk
- 1/4 cup margarine or butter, softened
- 1 egg
- 1 tsp vanilla
- Broiled coconut topping (recipe follows)
Makes 8 servings.
- Grease and flour an 8x8" baking pan. Set aside.
- In a large mixing bowl combine flour, sugar, and baking powder. Add milk, margarine or butter, egg, and vanilla. Beat with an electric mixer on low speed for 30 seconds. Beat on medium speed for 1 minute. Pour batter into prepared pan.
- Bake in a 350° oven for 25-30 minutes or until toothpick, inserted comes out clean. Spread topping over warm cake and broil about 4" from heat for 3-4 minutes or until golden.
- Cool before serving.
Broiled Coconut Topping:
- Broiled coconut topping: In a medium bowl stir together 1/4 cup packed brown sugar and 2 Tbsp melted margarine or butter. Stir in 1 Tbsp milk. Then stir in 1/2 cup flaked coconut, and, if desired, 1/4 cup chopped nuts.
