Blondies (and variations)
  1. Mix flour with baking soda and salt.
  2. In large bowl, beat butter and sugars until fluffy. Add egg and vanilla and beat well.
  3. Gradually add dry ingredients.
  4. Spread batter in lightly sprayed or greased prepared baking pan. Bake at 350° for 20-25 minutes.
  5. Cool, then cut into squares.

Var: Peanut butter or Butterscotch Blondies - Sprinkle 1/2 cup of chips of either flavor on top after baking for 5 minutes. Swirl melted chips, and continue baking for 15-20 minutes.

Var: White Chocolate Blondies - Add white chocolate chips to batter before baking.
