Boss Black Bean Stew
  1. Brown ground chuck, seasoning with garlic salt, minced onion, and ground black pepper. Drain well.
  2. In a stew pot or large saucepan, combine black beans, rotel, white onion, and crushed garlic. Simmer, stirring occasionally, over medium heat for about 15 minutes.
  3. Add seasoned meat. Stir to combine well.
  4. Cook on medium heat for another 10 minutes.

Serve in bowls, topped with a dollop of sour cream and green onion. Tortilla chips on the side are great for dipping or even to use as your eating 'utensil'.

Serve 4-5.
