- 1 lb ground chuck
- ground black pepper
- garlic salt
- minced onion
- 2 cans whole black beans (do NOT drain)
- 2 cans rotel
- 1/2 cup chopped white onion
- about 1 tsp crushed garlic (in a jar in the produce section, or do-it-yourself)
- sour cream
- fresh green onion, chopped
- corn tortilla chips
- Brown ground chuck, seasoning with garlic salt, minced onion, and ground black pepper. Drain well.
- In a stew pot or large saucepan, combine black beans, rotel, white onion, and crushed garlic. Simmer, stirring occasionally, over medium heat for about 15 minutes.
- Add seasoned meat. Stir to combine well.
- Cook on medium heat for another 10 minutes.
Serve in bowls, topped with a dollop of sour cream and green onion. Tortilla chips on the side are great for dipping or even to use as your eating 'utensil'.
Serve 4-5.
